Spinach & Mushroom Lasagna





Oh yummy. this is one of my most favorite dinners. Surprisingly lasagna is really really really easy to make. And its so much better freshly made, rather than buying it in the store { I try to avoid frozen dinners, you lose lots of nutrition in the food}

1 package - Lasagna Noodles
1 24 oz can - Marinara Sauce
1 package - Baby Spinach Greens
1 package - pre sliced mushrooms
Mozzarella Cheese
Ricotta Cheese

Cook the noodles as said on the package. Lay the noodles flat on paper towels, after done cooking, and let dry for about 5 minutes. Using a 13x9 casserole dish, layer the sauce, noodles, spinach, mushrooms, mozzarella, and ricotta (in that order). keep layering until you fill up the dish. usually about 6 layers. Preheat oven to 350. Bake for 1 hour. Put a lid on top of the lasagna for half the time, and the the other half bake with the lid off. I find that if I leave the lid off the whole time then it dries out too much. You can even leave the lid on a little longer if you prefer.

Living a vegetarian lifestyle is not always easy. And since I love blogging so much I have decided to do a food blog all about yummy vegetarian food...
